Giacomino Drago is the youngest of eight children from the small town of Galati Mamertino in Sicily’s Messina region where the family grew and made almost everything they ate; from pressing olives to make olive oil, to making fresh cheeses, to watching his father make wine from their own vineyards.

    When the Drago family was naming the Sherman Oaks restaurant, they wanted a title befitting their love of fresh Italian foods and an homage to their southern Italian heritage. Panzanella seems perfect. Chef Giacomino Drago, the youngest of the five Drago brothers, admits his addiction to the salad. “It really is Italy in a bowl,” he explains. “It has all the main ingredients of Italian cooking: olive oil, tomatoes, basil and onion.” Throw in cucumber and homemade oversized croutons and you’ve got Panzanella. “I always eat this when I’m homesick because it’s what I grew up with in my Sicilian village.”While fresh ingredients beautifully prepared is our hallmark, it’s our staff that gives Panzanella a warm atmosphere.
